Spread Your Wings And Fly Sweet Babies

This is one of my favorite times of year, usually that is….Generally my hardest season is back to school time. I love every minute of my kiddos and Hubs underfoot, the slowed schedules, the time to beach it, boat it, and just be plain lazy. But this year, this year I am really struggling with my depression and anxiety in this season. This season of life is frankly scaring the pants off of me. ..My oldest is finishing middle school. My baby girl is now 13, a real teenager with all that comes. My baby, my baby baby is going to finish elementary. Don’t get me wrong, I am still counting the days- there are 8 more. Eight more school days where I have kids in middle and elementary school. I’m just counting them differently this year. They are growing up so fast. It’s all happening so quickly. Buffalo Chicken Soup (topped with blue cheese here) Ya'll. I just can't even describe how amazing this tastes- it is just so very decadent and exactly what I was craving today with my cold. The fact that it comes together with little to no effort was just the icing on on the proverbial cake for me today! As much as I love buffalo dip, I may just love this more! Ingredients : 25 ounces canned white meat chicken ( or shred your own) 10 oz riced cauliflower ( I used frozen Birdseye) 1/2 cup Frank's Hot Sauce 1/2 cup sour cream 1/2 cup heavy cream 2 cups chicken stock 1 cup shredded cheddar cheese 1 Tbsp Ranch ( I used Penzey's) 1 can Chipotle Rotel ( or any Rotel) Directions: Dump all ingredients except sour cream into Instant Pot. Set to Soup Setting ( or Manual 20 min) and make sure top is on Sealing. Now just let it cook and depressurize. Stir in sour cream and taste for any flavor adjustments.  Serve with extra cheese, or blue cheese on top. E
Keto Breaded Pork Chops - A Quick and Easy Recipe INGREDIENTS - 8 thin cut boneless pork chops ( can also use chicken) 1 cup crushed pork rinds  1/2 cup parmesan cheese (the kind in the green can!) 1/4 cup Nutritional Yeast ( this ingredient is SO flavorful - worth buying! but you could just use the parmesan and pork rinds only 1:1 ratio if you wanted) salt and pepper to taste any other seasonings to taste ( I used a bit of garlic powder today) 1 stick melted butter ( this is IMPORTANT!) DIRECTIONS- Combine dry ingredients together in a shallow bowl.  Melt butter in a Shallow bowl. Season butter, dry ingredients and pork with salt and pepper, as well as any seasoning of choice. Set up bowls and a parchment lined baking pan assembly line style. Dip pork into butter, then coat well in dry mixture, then set on pan. Repeat this step until all pork is finished. Bake in top rack of oven at 425 degrees approx 20-25 min, depending on thickness of  your meat. Serve  a
Mexican Chorizo Egg Bake This is delicous beyond words ya'll! So so so thankful for my friend Autumn, @watchautumnketo for making something similar recently over on her YouTube channel!!! I cannot recommend this one enough ya'll!!! INGREDIENTS 12 eggs 1/4 cup Heavy Cream 1 lb Chorizo, cooked 1 small can diced fire roasted peppers ( or jalapeno, or green chiles) 1/2 packet of frozen onions/peppers mix ( I used PicSweet brand from Walmart)- optional ( could add any veggies you like!!!) 1 cup cheddar cheese, shredded salt/pepper to taste some chopped cilantro if you like cilantro- I know its a love/hate ingredient Jalapenos, sliced ( for topping the casserole, use how ever many you like) DIRECTIONS Combine eggs, cream and seasoning - Beat well till all incorporated. Add remaining ingredients ( reserving 1/2 cup of the cheese for topping, and jalapenos for topping) Pour into a 9X13 pan Top with remaining cheese and Jalapenos Bake at 350degrees till set,
ARMADILLO EGGS- Basically a Jalapeno Popper stuffed inside Sausage- and my twist was to roll them in crushed pork rinds for a crispy crunchy delicious addition! Ingredients: 1 roll jimmy dean hot sausage 4 oz cream cheese 1/2 cup shredded cheddar cheese ( or cheese of choice) 8 jalapenos BBQ rub seasoning (1/2 tbsp in cheese mixture, 1 Tbsp in pork rind crust) pork rinds, crushed ( approx 1 cup or so) Directions: Prep Jalapenos by cutting in half and removing all seeds Combine cheeses and 1/2 Tbsp seasoning until well incorporated Stuff Cheese in each jalapeno half and then sandwich them together, repeat with all 8 jalapenos Wrap each Jalapeno well in the sausage, making sure there is no jalapeno showing. (you want to make sure they are super well encased so that no cheese comes out in cooking) Combine remaining seasoning and crushed pork rinds, then roll each popper in this mixture, making sure that the get a really good coating Cook at 350 for 25 minutes.

Low Carb Texas Chili

TimetoShrink's Low Carb Texas Chili Ingredients: 2 lbs Sirloin Steak, cubed 2 lbs Top Round Steak, cubed 6 oz bacon, cooked and chopped 1 1/2 Tbsp Avacado oil 4 oz red onion, diced 4.5 oz sweet peppers, diced 1 Tbsp garlic, minced 3 Tbsp Tomato paste 2 cans Rotel 3 T chili powder ( I used 1 T Penzey medium hot chil, 2 T Penzey Chili 3000) 1 Tbsp Mexican Oregano (again Penzey) 1 Tbsp Cocoa Powder 1/2 Tbsp Cinnamon salt/pepper to taste ( I seasoned my meat pretty liberally with this) 1 low carb beer ( I used Michelob, you could used extra beef broth) 1 cup beef stock 1 T Yuzu Hot Sauce ( trader joes) Season meat with salt and pepper liberally. Heat oil on Saute function of Instant Pot, and sear meat on all sides in batches. Next, add veggies and saute a couple of minutes Add tomato paste and give it a good stir. Saute another min or so. Add in remaining ingredients Set top to nonventing and set MANUEL for 60 minutes. I let it go till it self releases

Keto Pumpkin Spice Muffins

Pumpkin Spice Muffins: ¾ cupmelted butter ⅓ cup heavy cream 4 tbsp almond milk 4 eggs 1 cup canned pumpkin 1 tsp vanilla extract ½ cup gentle sweet 1 ½ cups Trim Healthy Mama Baking Blend ¼ cup flaxseed, ground ¼ cup hempseed 4 tsp baking powder Pinch salt 2 tbsp Pumpkin Pie Spice For streusel 2 Tbsp THM baking blend 2 Tbsp gentle sweet 2 Tbsp butter, softened 1 tsp pumpkin pie spice DIrections: Combine dry ingredients. Combine wet ingredients. Dump together and stir till well incorporated. Place in lined muffin pan Bake for 25 minutes or until fork stuck in middle comes out clean. ( I used parchment paper muffin liners, you could use silicone molds, or no molds and season each with butter….) Note: We found them to be best completely cooled and buttered.

Quick and Easy Low Carb Sausage Balls

Sausage Balls - My Family Recipe Ketofied! 1 pound ground sausage ( we prefer the a spicy one) 8 oz shredded cheddar 1/4 cup Kraft Parmesan cheese (green can) 1 cup Trim Healthy Mama Blend flour ( could sub almond flour, but see my substitution note below) 1 tsp Baking Powder salt/pepper to taste, about a tsp each DIRECTIONS: Preheat oven to 350 degrees Dump all ingredients in a bowl and use your hands to mash it all together well. It will not fully incorporate, there is always some stray cheese and flour, thats ok, but work it until almost fully incorporated) Next form balls and place on a baking sheet lined with parchment. Bake for 20 min or so..till golden brown! Enjoy! *****If you use almond flour I suggest adding 4 oz cream cheese as well, as it could be a bit drier. *****Sometimes I add the cream cheese anyways- I love cream cheese!!!!!
