Buffalo Chicken Soup (topped with blue cheese here) Ya'll. I just can't even describe how amazing this tastes- it is just so very decadent and exactly what I was craving today with my cold. The fact that it comes together with little to no effort was just the icing on on the proverbial cake for me today! As much as I love buffalo dip, I may just love this more! Ingredients : 25 ounces canned white meat chicken ( or shred your own) 10 oz riced cauliflower ( I used frozen Birdseye) 1/2 cup Frank's Hot Sauce 1/2 cup sour cream 1/2 cup heavy cream 2 cups chicken stock 1 cup shredded cheddar cheese 1 Tbsp Ranch ( I used Penzey's) 1 can Chipotle Rotel ( or any Rotel) Directions: Dump all ingredients except sour cream into Instant Pot. Set to Soup Setting ( or Manual 20 min) and make sure top is on Sealing. Now just let it cook and depressurize. Stir in sour cream and taste for any flavor adjustments.  Serve with extra cheese, or blue cheese on top. E
Keto Breaded Pork Chops - A Quick and Easy Recipe INGREDIENTS - 8 thin cut boneless pork chops ( can also use chicken) 1 cup crushed pork rinds  1/2 cup parmesan cheese (the kind in the green can!) 1/4 cup Nutritional Yeast ( this ingredient is SO flavorful - worth buying! but you could just use the parmesan and pork rinds only 1:1 ratio if you wanted) salt and pepper to taste any other seasonings to taste ( I used a bit of garlic powder today) 1 stick melted butter ( this is IMPORTANT!) DIRECTIONS- Combine dry ingredients together in a shallow bowl.  Melt butter in a Shallow bowl. Season butter, dry ingredients and pork with salt and pepper, as well as any seasoning of choice. Set up bowls and a parchment lined baking pan assembly line style. Dip pork into butter, then coat well in dry mixture, then set on pan. Repeat this step until all pork is finished. Bake in top rack of oven at 425 degrees approx 20-25 min, depending on thickness of  your meat. Serve  a
Mexican Chorizo Egg Bake This is delicous beyond words ya'll! So so so thankful for my friend Autumn, @watchautumnketo for making something similar recently over on her YouTube channel!!! I cannot recommend this one enough ya'll!!! INGREDIENTS 12 eggs 1/4 cup Heavy Cream 1 lb Chorizo, cooked 1 small can diced fire roasted peppers ( or jalapeno, or green chiles) 1/2 packet of frozen onions/peppers mix ( I used PicSweet brand from Walmart)- optional ( could add any veggies you like!!!) 1 cup cheddar cheese, shredded salt/pepper to taste some chopped cilantro if you like cilantro- I know its a love/hate ingredient Jalapenos, sliced ( for topping the casserole, use how ever many you like) DIRECTIONS Combine eggs, cream and seasoning - Beat well till all incorporated. Add remaining ingredients ( reserving 1/2 cup of the cheese for topping, and jalapenos for topping) Pour into a 9X13 pan Top with remaining cheese and Jalapenos Bake at 350degrees till set,
ARMADILLO EGGS- Basically a Jalapeno Popper stuffed inside Sausage- and my twist was to roll them in crushed pork rinds for a crispy crunchy delicious addition! Ingredients: 1 roll jimmy dean hot sausage 4 oz cream cheese 1/2 cup shredded cheddar cheese ( or cheese of choice) 8 jalapenos BBQ rub seasoning (1/2 tbsp in cheese mixture, 1 Tbsp in pork rind crust) pork rinds, crushed ( approx 1 cup or so) Directions: Prep Jalapenos by cutting in half and removing all seeds Combine cheeses and 1/2 Tbsp seasoning until well incorporated Stuff Cheese in each jalapeno half and then sandwich them together, repeat with all 8 jalapenos Wrap each Jalapeno well in the sausage, making sure there is no jalapeno showing. (you want to make sure they are super well encased so that no cheese comes out in cooking) Combine remaining seasoning and crushed pork rinds, then roll each popper in this mixture, making sure that the get a really good coating Cook at 350 for 25 minutes.

Low Carb Texas Chili

TimetoShrink's Low Carb Texas Chili Ingredients: 2 lbs Sirloin Steak, cubed 2 lbs Top Round Steak, cubed 6 oz bacon, cooked and chopped 1 1/2 Tbsp Avacado oil 4 oz red onion, diced 4.5 oz sweet peppers, diced 1 Tbsp garlic, minced 3 Tbsp Tomato paste 2 cans Rotel 3 T chili powder ( I used 1 T Penzey medium hot chil, 2 T Penzey Chili 3000) 1 Tbsp Mexican Oregano (again Penzey) 1 Tbsp Cocoa Powder 1/2 Tbsp Cinnamon salt/pepper to taste ( I seasoned my meat pretty liberally with this) 1 low carb beer ( I used Michelob, you could used extra beef broth) 1 cup beef stock 1 T Yuzu Hot Sauce ( trader joes) Season meat with salt and pepper liberally. Heat oil on Saute function of Instant Pot, and sear meat on all sides in batches. Next, add veggies and saute a couple of minutes Add tomato paste and give it a good stir. Saute another min or so. Add in remaining ingredients Set top to nonventing and set MANUEL for 60 minutes. I let it go till it self releases

Keto Pumpkin Spice Muffins

Pumpkin Spice Muffins: ¾ cupmelted butter ⅓ cup heavy cream 4 tbsp almond milk 4 eggs 1 cup canned pumpkin 1 tsp vanilla extract ½ cup gentle sweet 1 ½ cups Trim Healthy Mama Baking Blend ¼ cup flaxseed, ground ¼ cup hempseed 4 tsp baking powder Pinch salt 2 tbsp Pumpkin Pie Spice For streusel 2 Tbsp THM baking blend 2 Tbsp gentle sweet 2 Tbsp butter, softened 1 tsp pumpkin pie spice DIrections: Combine dry ingredients. Combine wet ingredients. Dump together and stir till well incorporated. Place in lined muffin pan Bake for 25 minutes or until fork stuck in middle comes out clean. ( I used parchment paper muffin liners, you could use silicone molds, or no molds and season each with butter….) Note: We found them to be best completely cooled and buttered.

Quick and Easy Low Carb Sausage Balls

Sausage Balls - My Family Recipe Ketofied! 1 pound ground sausage ( we prefer the a spicy one) 8 oz shredded cheddar 1/4 cup Kraft Parmesan cheese (green can) 1 cup Trim Healthy Mama Blend flour ( could sub almond flour, but see my substitution note below) 1 tsp Baking Powder salt/pepper to taste, about a tsp each DIRECTIONS: Preheat oven to 350 degrees Dump all ingredients in a bowl and use your hands to mash it all together well. It will not fully incorporate, there is always some stray cheese and flour, thats ok, but work it until almost fully incorporated) Next form balls and place on a baking sheet lined with parchment. Bake for 20 min or so..till golden brown! Enjoy! *****If you use almond flour I suggest adding 4 oz cream cheese as well, as it could be a bit drier. *****Sometimes I add the cream cheese anyways- I love cream cheese!!!!!

Quick and Easy Series: Keto Chicken Fingers with Mock Honey Mustard

My family loves chicken fingers- its a comfort food for all of us for sure. So of course I have a few keto versions that we love. This one may be my favorite- for two reasons- its just SO FLAVORFUL, while at the same time the easiest to whip up! I hope you will give them a try- the secret to these is in the breading combination! We love this breading so much that I actually make it in bulk, already mixed together and ready to go- making a great dinner even quicker!!!! For the chicken You will need: Chicken, cut into strips that are approx. equal in size, around 2 lbs 1/2 cup nutritional yeast 1 cup Parmesan ( the green can kind) 1 cup crushed pork rinds seasoning of your choice, to taste 1 stick butter, melted Directions:  ( preheat oven to 400 degrees) Dip Chicken into the butter. Coat with breadcrumb mixture very well. Repeat, Placing them on parchment lined baking sheet. Cook for 20 minutes, then increase temp to 450 and bake additional 5 minutes. For the

Keto Cheeseburger Casserole (with cabbage)

This is a family favorite recipe of mine, and boy am I glad because it is also one of my quick and easy recipes!!!! I just love it when I can feed my family in a jiffy! What you will need: 2 lbs ground hamburger meat 3 eggs 1 package of prepared cabbage  1 cup mayonaise 1 cup sour cream 1 cup shredded cheese ( you choose what type!) seasoning of your choice, amount of your choice ( i tend to do about a tbsp montreal steak seasoning generally, but at times I vary to make a mexican version, or an italian version, or...well you get it!) DIRECTIONS- Cook ground beef in a large pan over a medium heat until no longer pink.  Add cabbage and seasoning. Stir well and then turn to a low heat and cover.  Cook until cabbage has wilted down, around 10 minutes. Next stir remaining ingredients through sour cream.  Place beef mixuture in a pan. Top with mayonaise mixture. Top with Cheese. Bake in 350 degree oven for 30 minutes. Serve and Enjoy! NUTRITION- Total Calories 6

Keto Buffalo Chicken Ranch Casserole

This recipe is easy peasy a'll- and boy is it sinfully delicious! This recipe is 100% low carb, keto friendly! 2 lbs shredded Chicken ( I make ahead in my instant pot, could use rotisserie chicken easily as well) 1/4 cup bacon, cooked and diced - or bacon bits! 1/2 cup sour cream 1/2 cup hot sauce of choice ( Texas Pete or Franks would work well) 1 block (8 oz) cream cheese- full fat 2 Tbsp Buttermilk Ranch Dressing mix ( I use this one   ) 1 cup Cheese( I used a mix of Cheddar and Monterrey Jack) 1 package Steamable Cauliflower Rice ( I use Birdseye or Trader Joes), cooked according to package. Directions: Stir sour cream through ranch well in a bowl.  Add in Chicken and combine. Spread Riced Cauliflower in bottom of 9x13 baking dish. Spread Chicken Mixture over the top of the riced Cauliflower. Cover with Cheese. Sprinkle on Bacon. BAKE in 350 degree oven for 30 minutes!  THAT IS IT Ya'LL! EASY PEASY! Variations- leave out the cauliflower rice

Pizza Casserole

PIZZA CASSEROLE- This is more of a method than a recipe; by this I mean you can use whatever you feel like as toppings, and whatever cheese you have on hand, or feel like using. It would be easy even to change seasonings and replace the marinara with salsa, reinventing this as a Mexican style dish---and on and on.... For the purposes of being able to give nutrition facts I made it exactly as described below. Ingredients- 8 oz shredded cheese, divided 1.5 oz parmesan (I use the kind in the green can for this!) 2 Birdseye brand cauliflower rice ( or you could of course make your own if you really wanna) 1 egg 1/2 cup Heavy Whipping Cream 2 tsp italian seasoning 1 tsp garlic seasoning salt and pepper to taste  1 lb Italian ground sausage, cooked (save grease to add to cauliflower mixture for the added fat- optional, but why not?) 9.5 oz pepperoni ( I use uncured) 1 cup pizza sauce ( I used Walmart brand today) Preheat your oven to 375 degrees Fahrenheit and Grease y

Time to Shrink's Low Carb Green Chicken Enchiladas

Low Carb Chicken Enchiladas (1 recipe using low carb tortillas / 1 recipe using zucchini noodles as tortillas) --See video for much more detailed directions-- INGREDIENTS: 2 lbs shredded chicken ( I tend to shred in big batches in my Instant pot- See my crack chicken recipe for directions) 1 can Rotel 1 block Philadelphia Cream cheese 1 Tbsp spices of choice (optional- I tend to do taco seasoning type combination, but will be super tasty even if you totally omit this step) 2 Tbsp crushed chipotle peppers ( purely optional- if you enjoy heat) 1 bag Mexican shredded cheese, or equivalent amount cheese of choice (divided) 1 can Green Enchilada Sauce ( I use Aldi brand) 8 low carb tortillas of choice 1. 1-2 zucchini, sliced length wise thinly on a mandolin1.Combine chicken through half bag shredded cheese together in bowl and mix till well incorporated. 2. Meatloaf is something I make often because no matter who in the family is ready to eat at what time, meatloaf holds so very well and is just as good straight out of the oven as it is hours later, or even later in the week! Meatloaf is perfect for Meal Planning as it just holds up and reheats beautifully! So whether you make this for a family, or just for you to eat on over the week- this recipe is just scrumptious! Ingredients-  for meatloaf- 1 lb ground beef 1 lb ground pork ( or sausage) 1/4 onion - diced 1 egg 1/4 cup Parmesan Cheese 1 Tbsp Penzey's Northwood Seasoning 2 tsp garlic bread seasoning (the gourmet collection brand) 2 tsp Italian seasoning for interior of meatloaf- provolone cheese slices, entire package 1/2 red pepper, sliced 1/4 onion, sliced (bit of oil for sauteeing) for glaze-- 1 T Worcestershire sauce 1/4 cup Heinz Reduced Sugar Ketchup 1 tsp hot sauce of choice Set oven to 350 degrees Fahrenheit. 1. I don't know if you've ever heard of Crack Chicken, but I made my version for dinner tonight and was reminded just how addictive this stuff is and how much my family LOVES it. I've made it to take a meal to people in the past as well and I have never had a bad review. It is also VERY Keto friendly and can be made quickly and used for meal prep for a week so so easily! I made it to serve Family Style. So, here goes.... My  Instant Pot Crack Chicken - Ingredients: 2 lbs chicken ( I used chicken breast but you could do thighs or even skip the instant pot and make your shredded chicken from a rotisserie or however you please) 1 Tbsp Ranch seasoning ( I use Penzey's buttermilk ranch  ) - it does have a tad sugar in it but its so little and spread out over many serving... 1 cup water seasoning salt 8 oz cream cheese 1. Sheet Pan Chicken Fajitas This recipe is so simple and so versatile, as its easy to do for meal prep or size up and do to serve a ton of peeps! I did film a video making this family style for a party, but I will post below just as a basic recipe! I hope ya'll can make this and enjoy it as much as we do! Ingredients 2 lbs chicken, cut into thin strips 1 red pepper, sliced 1 yellow pepper, sliced 1 onion, sliced 1 lemon 2 Tbsp fajita seasoning, divided ( I like Penzey's   ) 2 Tbsp Avocado oil, divided ( or oil of your choice) Toppings of choice- shredded lettuce shredded cheeses salsa guacamole sour cream pepitas /sunflower seeds sliced limes ( and on and on, whatever floats your boat!) DIRECTIONS: Turn oven on 350 Toss chicken with seasoning and about 1 Tbsp of avocado oil. Spread it out on a sheet pan. Set aside Now do the same with veggies! Pop both sheet pans in oven for 15 min. Thai Meatballs with a Spicy Thai Peanut Sauce- Keto friendly!

Sometimes things just come together. Some days you just KILL it in the Kitchen. I don't feel like that happens all that often for me, but today I was just feeling myself ya'll. LOL! So I furiously copied down the ingredients and amounts used so that I could recreate this meal again and again. If anyone tries it let me know what you think! Thai Meatballs over Zoodles with Thai Peanut Sauce Ingredients for Meatballs 2 lbs ground beef (80/20) 2.5 Tbsp Thai curry spice seasoning Mix together thoroughly and then form into smallish meatballs. Brown on all sides in 1 Tbsp of cooking oil ( I used avocado oil) and then place on simmer with a lid for a few minutes to cook through. Make sauce while it simmers. Ingredients for Sauce 3/4 cup Peanut butter ( no sugar added) 1/2 cup Soy sauce 1 Tbsp Chili garlic sauce (this amount is good for mild spice, add more or less) 1 tsp ground ginger 1/4 cup Coconut milk (only do the creamy part, drain the liquid off) 

Instant Pot Sausage and Peppers

Ok, so peppers, onions, and tomatoes are not the lowest carb count. I Know! I KNOW!  I think I actually stay under 10 carbs- but it is so hard to count it out exactly in this meal. I make this for my family who are not keto, so its easy to just take the parts that fit for me and serve the rest to my family with pasta. My advise is to make sure you buy sausage and marinara with the lowest carb count possible. This way you can eat as much sausage as you desire, and just a bit of the rest for flavoring. When you cook this in the Instant Pot you infuse the sausage with all the flavors- so you can enjoy this meal and not really even do much sauce. Meatball Casserole

MEATBALL CASSEROLE This casserole is a quick and easy weeknight KETO friendly meal that can be adapted with sides to serve anyone in your family. I tend to eat this with a side of broccoli and cauliflower. My kids prefer over pasta with veggies on the side. Once in a blue moon I will make them in individual fathead boats- almost sub sammie style! If you want to make this even faster you could easily make up a ton of meatballs and freeze for even faster assembly! Ingredients- 2 lbs ground beef ( i prefer to use 80-20, though the recipe stats have 85-15) 1/4 cup pesto ( any kind, I just go for jarred from ALDI generally) 1/4 cup Parmesan ( the kind in the green jar, but anything works) 1 tsp garlic powder 1 Tbsp Italian seasoning dry blend of choice salt and pepper to taste crushed red peppers (about a tsp but totally optional) 1 reg jar Marinara sauce, approx 2 cups( I used Trader Joe three cheese pomadoro) 1 cup Mozzarella Cheese, shredded Preheat ove

Jalapeno Popper Stuffed Chicken

Jalapeno Popper Stuffed Chicken Breast INGREDIENTS - 5 chicken breasts 6 oz cream cheese 1/4 cup shredded cheddar 2 jalapenos diced finely 4 pieces bacon cooked and finely diced, reserve bacon grease 3/4 pound ground pork sausage, cooked  1.Make jalapeno mixture and set aside - Take cream cheese through pork sausage and mix all together until incorporated 2. Slice each chicken breast part way through, forming a pocket. Salt and pepper each piece. 3. Place 2 mounded spoons of filling in each chicken breast and then using toothpicks close each piece. 4. Sear each side of chicken breast in the reserved bacon grease over a high heat and then set aside. 5. Place all the of seared breasts on baking sheet and bake for 350 degree oven for 30 min. (approximately- depends of thickness of breasts) Let sit for five minutes or so and then serve with side of your choice.
