Thai Meatballs with a Spicy Thai Peanut Sauce- Keto friendly!

Sometimes things just come together. Some days you just KILL it in the Kitchen. I don't feel like that happens all that often for me,
but today I was just feeling myself ya'll. LOL!
So I furiously copied down the ingredients and amounts used so that I could recreate this meal again and again. If anyone tries it let me know what you think!

Thai Meatballs over Zoodles with Thai Peanut Sauce

Ingredients for Meatballs
  • 2 lbs ground beef (80/20)
  • 2.5 Tbsp Thai curry spice seasoning
Mix together thoroughly and then form into smallish meatballs. Brown on all sides in 1 Tbsp of cooking oil ( I used avocado oil) and then place on simmer with a lid for a few minutes to cook through.
Make sauce while it simmers.

Ingredients for Sauce
  • 3/4 cup Peanut butter ( no sugar added)
  • 1/2 cup Soy sauce
  • 1 Tbsp Chili garlic sauce (this amount is good for mild spice, add more or less)
  • 1 tsp ground ginger
  • 1/4 cup Coconut milk (only do the creamy part, drain the liquid off) 
    • tip-- put coconut milk in fridge overnight and then just scoop off the cream from top and use it all!
  • 2 Tbsp Apple Cider Vinegar (could probably do rice wine vinegar)
  • 1.5 T Sesame Oil
  • 1/2 cup water
  • 1/4 cup Gentle Sweet ( or sweetener of choice)
Place all ingredients in a blender and blend away. Taste and readjust sweetness and heat per your taste. If its too thick can always thin with a bit more water. ( This makes a ton of sauce- which is pretty exciting as its so so good. I will be using it as a salad dressing and for dipping this week!!!)

After meatballs are finished set meatballs on a plate to the side and place zoodles in your pan and steam for 2-5 minutes, depending on size of zoodles. 

Serve and ENJOY! 
My family thought this sauce was BOMB. I sure hope you all love it as well!!!!
This could easily be portioned out for Meal Prep!!!!

Quick and Easy Low Carb Sausage Balls

Sausage Balls - My Family Recipe Ketofied! 1 pound ground sausage ( we prefer the a spicy one) 8 oz shredded cheddar 1/4 cup Kraft Parmesan cheese (green can) 1 cup Trim Healthy Mama Blend flour ( could sub almond flour, but see my substitution note below) 1 tsp Baking Powder salt/pepper to taste, about a tsp each DIRECTIONS: Preheat oven to 350 degrees Dump all ingredients in a bowl and use your hands to mash it all together well. It will not fully incorporate, there is always some stray cheese and flour, thats ok, but work it until almost fully incorporated) Next form balls and place on a baking sheet lined with parchment. Bake for 20 min or so..till golden brown! Enjoy! *****If you use almond flour I suggest adding 4 oz cream cheese as well, as it could be a bit drier. *****Sometimes I add the cream cheese anyways- I love cream cheese!!!!!

Today I may or may not have the flu. How would you not know, right? Well, if you have Fibromyalgia, every day feels like a variation of the Flu. So if I ever do get sick, like an acute Sickness, well I never know if it is yet another symptom, or a just a bad Fibro day.
