Instant Pot Sausage and Peppers

Ok, so peppers, onions, and tomatoes are not the lowest carb count. I Know! I KNOW!  I think I actually stay under 10 carbs- but it is so hard to count it out exactly in this meal. I make this for my family who are not keto, so its easy to just take the parts that fit for me and serve the rest to my family with pasta.

My advise is to make sure you buy sausage and marinara with the lowest carb count possible. This way you can eat as much sausage as you desire, and just a bit of the rest for flavoring.
When you cook this in the Instant Pot you infuse the sausage with all the flavors- so you can enjoy this meal and not really even do much sauce. Serve it with a big green salad with a no carb dressing and you are golden!

 

Instant Pot Sausage and Peppers
2 onions
3 bell peppers, any colors
2 pounds Italian sausage links- I use Hot but any kind you like
1 tsp garlic powder
1 jar no sugar added marinara ( I like trader joes brand)

-----my recommendation is to make sure you get very low carb marinara and no carbs in your sausuage, then eat mostly sausage and bit of veggie. ------

( I make this for my whole family, only me being keto, so this works for me)

1. Set Instant pot to saute and add 1 tbsp cooking oil ( I use avocado oil here)
2. Add sausages, brown on each side.
3. Add all veggies and seasoning.
4. Pour on jar of marinara. Next, fill the empty jar 1/4 way with water and shake it up to get all the good sauce off the sides. Add this to the instant pot. Press food down so mostly all covered with sauce.
5. Set Instant Pot to Manual 20 min. Make sure knob on top in non-venting. Now just let it go. I generally let it go till depressurized fully. If you are in a hurry you could vent it after its cooked the 20 min probably.

- KETO PEEPS can do over zoodles, or serve with cauliflower garlic bread. If you wanna get fancy you could make fathead hoagies even.

Nutrition--
this is going to vary based on marinara sauces and exact sausages you get.
Onions and peppers are a bit carby, as well as marinara so this is a meal that you will need to make sure fits in your macros of the day. As I made it today my serving will have 15 carbs I believe and around 300 caloires. I plan to just take a very small bit of sauce and mostly eat the sausages and a small bit of the veggies. I will let my family eat the remaining,

Quick and Easy Low Carb Sausage Balls

Sausage Balls - My Family Recipe Ketofied! 1 pound ground sausage ( we prefer the a spicy one) 8 oz shredded cheddar 1/4 cup Kraft Parmesan cheese (green can) 1 cup Trim Healthy Mama Blend flour ( could sub almond flour, but see my substitution note below) 1 tsp Baking Powder salt/pepper to taste, about a tsp each DIRECTIONS: Preheat oven to 350 degrees Dump all ingredients in a bowl and use your hands to mash it all together well. It will not fully incorporate, there is always some stray cheese and flour, thats ok, but work it until almost fully incorporated) Next form balls and place on a baking sheet lined with parchment. Bake for 20 min or so..till golden brown! Enjoy! *****If you use almond flour I suggest adding 4 oz cream cheese as well, as it could be a bit drier. *****Sometimes I add the cream cheese anyways- I love cream cheese!!!!!
