Buffalo Chicken Soup (topped with blue cheese here) Ya'll. I just can't even describe how amazing this tastes- it is just so very decadent and exactly what I was craving today with my cold. The fact that it comes together with little to no effort was just the icing on on the proverbial cake for me today! As much as I love buffalo dip, I may just love this more! Ingredients : 25 ounces canned white meat chicken ( or shred your own) 10 oz riced cauliflower ( I used frozen Birdseye) 1/2 cup Frank's Hot Sauce 1/2 cup sour cream 1/2 cup heavy cream 2 cups chicken stock 1 cup shredded cheddar cheese 1 Tbsp Ranch ( I used Penzey's) 1 can Chipotle Rotel ( or any Rotel) Directions: Dump all ingredients except sour cream into Instant Pot. Set to Soup Setting ( or Manual 20 min) and make sure top is on Sealing. Now just let it cook and depressurize. Keto Breaded Pork Chops - A Quick and Easy Recipe INGREDIENTS - 8 thin cut boneless pork chops ( can also use chicken) 1 cup crushed pork rinds  1/2 cup parmesan cheese (the kind in the green can!) 1/4 cup Nutritional Yeast ( this ingredient is SO flavorful - worth buying! but you could just use the parmesan and pork rinds only 1:1 ratio if you wanted) salt and pepper to taste any other seasonings to taste ( I used a bit of garlic powder today) 1 stick melted butter ( this is IMPORTANT!) DIRECTIONS- Combine dry ingredients together in a shallow bowl.  Melt butter in a Shallow bowl. Season butter, dry ingredients and pork with salt and pepper, as well as any seasoning of choice. Set up bowls and a parchment lined baking pan assembly line style. Dip pork into butter, then coat well in dry mixture, then set on pan. Repeat this step until all pork is finished. Keto Cheeseburger Casserole (with cabbage)

This is a family favorite recipe of mine, and boy am I glad because it is also one of my quick and easy recipes!!!! I just love it when I can feed my family in a jiffy! What you will need: 2 lbs ground hamburger meat 3 eggs 1 package of prepared cabbage  1 cup mayonaise 1 cup sour cream 1 cup shredded cheese ( you choose what type!) seasoning of your choice, amount of your choice ( i tend to do about a tbsp montreal steak seasoning generally, but at times I vary to make a mexican version, or an italian version, or...well you get it!) DIRECTIONS- Cook ground beef in a large pan over a medium heat until no longer pink.  Add cabbage and seasoning. Stir well and then turn to a low heat and cover.  Cook until cabbage has wilted down, around 10 minutes. Next stir remaining ingredients through sour cream.  Place beef mixuture in a pan. Time to Shrink's Low Carb Green Chicken Enchiladas

Low Carb Chicken Enchiladas (1 recipe using low carb tortillas / 1 recipe using zucchini noodles as tortillas) --See video for much more detailed directions-- INGREDIENTS: 2 lbs shredded chicken ( I tend to shred in big batches in my Instant pot- See my crack chicken recipe for directions) 1 can Rotel 1 block Philadelphia Cream cheese 1 Tbsp spices of choice (optional- I tend to do taco seasoning type combination, but will be super tasty even if you totally omit this step) 2 Tbsp crushed chipotle peppers ( purely optional- if you enjoy heat) 1 bag Mexican shredded cheese, or equivalent amount cheese of choice (divided) 1 can Green Enchilada Sauce ( I use Aldi brand) 8 low carb tortillas of choice 1. 1-2 zucchini, sliced length wise thinly on a mandolin1.Combine chicken through half bag shredded cheese together in bowl and mix till well incorporated. 2. Philly Cheese Steak Meatloaf

Meatloaf is something I make often because no matter who in the family is ready to eat at what time, meatloaf holds so very well and is just as good straight out of the oven as it is hours later, or even later in the week! Meatloaf is perfect for Meal Planning as it just holds up and reheats beautifully! So whether you make this for a family, or just for you to eat on over the week- this recipe is just scrumptious! Crack Chicken - Keto Approved!

I don't know if you've ever heard of Crack Chicken, but I made my version for dinner tonight and was reminded just how addictive this stuff is and how much my family LOVES it. I've made it to take a meal to people in the past as well and I have never had a bad review. It is also VERY Keto friendly and can be made quickly and used for meal prep for a week so so easily! I made it to serve Family Style. So, here goes.... Sheet Pan Chicken Fajitas This recipe is so simple and so versatile, as its easy to do for meal prep or size up and do to serve a ton of peeps! I did film a video making this family style for a party, but I will post below just as a basic recipe! I hope ya'll can make this and enjoy it as much as we do! Ingredients 2 lbs chicken, cut into thin strips 1 red pepper, sliced 1 yellow pepper, sliced 1 onion, sliced 1 lemon 2 Tbsp fajita seasoning, divided ( I like Penzey's   ) 2 Tbsp Avocado oil, divided ( or oil of your choice) Toppings of choice- shredded lettuce shredded cheeses salsa guacamole sour cream pepitas /sunflower seeds sliced limes ( and on and on, whatever floats your boat!)
