Meatloaf is something I make often because no matter who in the family is ready to eat at what time, meatloaf holds so very well and is just as good straight out of the oven as it is hours later, or even later in the week! Meatloaf is perfect for Meal Planning as it just holds up and reheats beautifully! So whether you make this for a family, or just for you to eat on over the week- this recipe is just scrumptious!
Ingredients-
for meatloaf-
1 lb ground beef
1 lb ground pork ( or sausage)
1/4 onion - diced
1 egg
1/4 cup Parmesan Cheese
1 Tbsp Penzey's Northwood Seasoning
2 tsp garlic bread seasoning (the gourmet collection brand)
2 tsp Italian seasoning
for interior of meatloaf-
provolone cheese slices, entire package
1/2 red pepper, sliced
1/4 onion, sliced
(bit of oil for sauteeing)
for glaze--
1 T Worcestershire sauce
1/4 cup Heinz Reduced Sugar Ketchup
1 tsp hot sauce of choice
Set oven to 350 degrees Fahrenheit.
1. Saute sliced onions and peppers over low/medium heat till softened.
2. Mix remaining meatloaf ingredients in a bowl till well combined.
3. Spread a piece of parchment paper over a baking sheet and spread out meatloaf till its thin, covering baking sheet. Next place provolone and sliced onions and red peppers on top of meatloaf, spread out over the meat.
4. Using the parchment paper to aid you, roll up the meatloaf into a roll. Seal in the end and sides.
5. Spread glaze over top.
6. Place on baking sheet and put in the oven for 45 min at 350 degrees. then broil for a few minutes to brown up the glaze.
Serve over mashed cauliflower and with a green salad or other green veggie!
