Keto Breaded Pork Chops - A Quick and Easy Recipe INGREDIENTS - 8 thin cut boneless pork chops ( can also use chicken) 1 cup crushed pork rinds  1/2 cup parmesan cheese (the kind in the green can!) 1/4 cup Nutritional Yeast ( this ingredient is SO flavorful - worth buying! but you could just use the parmesan and pork rinds only 1:1 ratio if you wanted) salt and pepper to taste any other seasonings to taste ( I used a bit of garlic powder today) 1 stick melted butter ( this is IMPORTANT!) DIRECTIONS- Combine dry ingredients together in a shallow bowl.  Melt butter in a Shallow bowl. Season butter, dry ingredients and pork with salt and pepper, as well as any seasoning of choice. Set up bowls and a parchment lined baking pan assembly line style. Dip pork into butter, then coat well in dry mixture, then set on pan. Repeat this step until all pork is finished. Quick and Easy Low Carb Sausage Balls

Sausage Balls - My Family Recipe Ketofied! 1 pound ground sausage ( we prefer the a spicy one) 8 oz shredded cheddar 1/4 cup Kraft Parmesan cheese (green can) 1 cup Trim Healthy Mama Blend flour ( could sub almond flour, but see my substitution note below) 1 tsp Baking Powder salt/pepper to taste, about a tsp each DIRECTIONS: Preheat oven to 350 degrees Dump all ingredients in a bowl and use your hands to mash it all together well. It will not fully incorporate, there is always some stray cheese and flour, thats ok, but work it until almost fully incorporated) Next form balls and place on a baking sheet lined with parchment. Bake for 20 min or so..till golden brown! Enjoy! *****If you use almond flour I suggest adding 4 oz cream cheese as well, as it could be a bit drier. *****Sometimes I add the cream cheese anyways- I love cream cheese!!!!!

Quick and Easy Series: Keto Chicken Fingers with Mock Honey Mustard

My family loves chicken fingers- its a comfort food for all of us for sure. So of course I have a few keto versions that we love. This one may be my favorite- for two reasons- its just SO FLAVORFUL, while at the same time the easiest to whip up! I hope you will give them a try- the secret to these is in the breading combination! We love this breading so much that I actually make it in bulk, already mixed together and ready to go- making a great dinner even quicker!!!! For the chicken You will need: Chicken, cut into strips that are approx. equal in size, around 2 lbs 1/2 cup nutritional yeast 1 cup Parmesan ( the green can kind) 1 cup crushed pork rinds seasoning of your choice, to taste 1 stick butter, melted Directions:  ( preheat oven to 400 degrees) Dip Chicken into the butter. Keto Cheeseburger Casserole (with cabbage)

This is a family favorite recipe of mine, and boy am I glad because it is also one of my quick and easy recipes!!!! I just love it when I can feed my family in a jiffy! What you will need: 2 lbs ground hamburger meat 3 eggs 1 package of prepared cabbage  1 cup mayonaise 1 cup sour cream 1 cup shredded cheese ( you choose what type!) seasoning of your choice, amount of your choice ( i tend to do about a tbsp montreal steak seasoning generally, but at times I vary to make a mexican version, or an italian version, or...well you get it!) DIRECTIONS- Cook ground beef in a large pan over a medium heat until no longer pink.  Add cabbage and seasoning. Stir well and then turn to a low heat and cover.  Cook until cabbage has wilted down, around 10 minutes. Next stir remaining ingredients through sour cream.  Place beef mixuture in a pan. Philly Cheese Steak Meatloaf

Meatloaf is something I make often because no matter who in the family is ready to eat at what time, meatloaf holds so very well and is just as good straight out of the oven as it is hours later, or even later in the week! Meatloaf is perfect for Meal Planning as it just holds up and reheats beautifully! So whether you make this for a family, or just for you to eat on over the week- this recipe is just scrumptious! Crack Chicken - Keto Approved!

I don't know if you've ever heard of Crack Chicken, but I made my version for dinner tonight and was reminded just how addictive this stuff is and how much my family LOVES it. I've made it to take a meal to people in the past as well and I have never had a bad review. It is also VERY Keto friendly and can be made quickly and used for meal prep for a week so so easily! I made it to serve Family Style. So, here goes.... Sheet Pan Chicken Fajitas This recipe is so simple and so versatile, as its easy to do for meal prep or size up and do to serve a ton of peeps! I did film a video making this family style for a party, but I will post below just as a basic recipe! I hope ya'll can make this and enjoy it as much as we do! Ingredients 2 lbs chicken, cut into thin strips 1 red pepper, sliced 1 yellow pepper, sliced 1 onion, sliced 1 lemon 2 Tbsp fajita seasoning, divided ( I like Penzey's   ) 2 Tbsp Avocado oil, divided ( or oil of your choice) Toppings of choice- shredded lettuce shredded cheeses salsa guacamole sour cream pepitas /sunflower seeds sliced limes ( and on and on, whatever floats your boat!) Instant Pot Sausage and Peppers

Ok, so peppers, onions, and tomatoes are not the lowest carb count. I Know! I KNOW!  I think I actually stay under 10 carbs- but it is so hard to count it out exactly in this meal. I make this for my family who are not keto, so its easy to just take the parts that fit for me and serve the rest to my family with pasta. My advise is to make sure you buy sausage and marinara with the lowest carb count possible. This way you can eat as much sausage as you desire, and just a bit of the rest for flavoring. When you cook this in the Instant Pot you infuse the sausage with all the flavors- so you can enjoy this meal and not really even do much sauce. Meatball Casserole

MEATBALL CASSEROLE This casserole is a quick and easy weeknight KETO friendly meal that can be adapted with sides to serve anyone in your family. I tend to eat this with a side of broccoli and cauliflower. My kids prefer over pasta with veggies on the side. Once in a blue moon I will make them in individual fathead boats- almost sub sammie style! If you want to make this even faster you could easily make up a ton of meatballs and freeze for even faster assembly! Jalapeno Popper Stuffed Chicken

Jalapeno Popper Stuffed Chicken Breast INGREDIENTS - 5 chicken breasts 6 oz cream cheese 1/4 cup shredded cheddar 2 jalapenos diced finely 4 pieces bacon cooked and finely diced, reserve bacon grease 3/4 pound ground pork sausage, cooked  1.Make jalapeno mixture and set aside - Take cream cheese through pork sausage and mix all together until incorporated 2. Slice each chicken breast part way through, forming a pocket. Salt and pepper each piece. 3. Place 2 mounded spoons of filling in each chicken breast and then using toothpicks close each piece. 4. Sear each side of chicken breast in the reserved bacon grease over a high heat and then set aside. 5. Place all the of seared breasts on baking sheet and bake for 350 degree oven for 30 min. (approximately- depends of thickness of breasts) Let sit for five minutes or so and then serve with side of your choice.
