Crack Chicken - Keto Approved!

I don't know if you've ever heard of Crack Chicken, but I made my version for dinner tonight and was reminded just how addictive this stuff is and how much my family LOVES it. I've made it to take a meal to people in the past as well and I have never had a bad review. It is also VERY Keto friendly and can be made quickly and used for meal prep for a week so so easily! I made it to serve Family Style.
So, here goes....

My  Instant Pot Crack Chicken -

Ingredients:
  • 2 lbs chicken ( I used chicken breast but you could do thighs or even skip the instant pot and make your shredded chicken from a rotisserie or however you please)
  • 1 Tbsp Ranch seasoning ( I use Penzey's buttermilk ranch ) - it does have a tad sugar in it but its so little and spread out over many serving...
  • 1 cup water
  • seasoning salt
  • 8 oz cream cheese
1. Place chicken in the Instant Pot and add a bit of seasoning salt, or salt and pepper. Set to Manuel, 17 minutes. Place lid and make sure knob on top is on non-venting. Let it go. 

2. After it has naturally vented take top off.  ( if you are in a hurry once the 17 minutes is up you can manual vent, but I find the chicken is tougher if I do that ) Next transfer chicken to your Kitchen Aid bowl with regular paddle. Make sure it is locked in place and turn it on slow. This will Shred your chicken in a few seconds. 

3. Add cream cheese and Ranch seasoning to shredded chicken and about 1/2 cup of the cooking liquid. Turn Mixer on slow till its all combined. 

That's it. That's the whole recipe. So So Simple and Easy Peasy!

Serve over a salad with dressing of choice, or make keto bread and eat as a sammie with a slice of cheese!!!!
(or if non keto as my kids are- they like it on a regular hamburger bun with a slice of cheddar cheese)

If you don't have a Large Mixer like a Kitchen aid you can shred chicken by hand and mix in the ingredients by hand of course. Not quite as fast, but still simple!

Quick and Easy Low Carb Sausage Balls

Sausage Balls - My Family Recipe Ketofied! 1 pound ground sausage ( we prefer the a spicy one) 8 oz shredded cheddar 1/4 cup Kraft Parmesan cheese (green can) 1 cup Trim Healthy Mama Blend flour ( could sub almond flour, but see my substitution note below) 1 tsp Baking Powder salt/pepper to taste, about a tsp each DIRECTIONS: Preheat oven to 350 degrees Dump all ingredients in a bowl and use your hands to mash it all together well. It will not fully incorporate, there is always some stray cheese and flour, thats ok, but work it until almost fully incorporated) Next form balls and place on a baking sheet lined with parchment. Bake for 20 min or so..till golden brown! Enjoy! *****If you use almond flour I suggest adding 4 oz cream cheese as well, as it could be a bit drier. *****Sometimes I add the cream cheese anyways- I love cream cheese!!!!!
