Crack Chicken - Keto Approved!

I don't know if you've ever heard of Crack Chicken, but I made my version for dinner tonight and was reminded just how addictive this stuff is and how much my family LOVES it. I've made it to take a meal to people in the past as well and I have never had a bad review. It is also VERY Keto friendly and can be made quickly and used for meal prep for a week so so easily! I made it to serve Family Style.
So, here goes....

My  Instant Pot Crack Chicken -

Ingredients:
  • 2 lbs chicken ( I used chicken breast but you could do thighs or even skip the instant pot and make your shredded chicken from a rotisserie or however you please)
  • 1 Tbsp Ranch seasoning ( I use Penzey's buttermilk ranch ) - it does have a tad sugar in it but its so little and spread out over many serving...
  • 1 cup water
  • seasoning salt
  • 8 oz cream cheese
1. Place chicken in the Instant Pot and add a bit of seasoning salt, or salt and pepper. Set to Manuel, 17 minutes. Place lid and make sure knob on top is on non-venting. Let it go.

2. After it has naturally vented take top off.  ( if you are in a hurry once the 17 minutes is up you can manual vent, but I find the chicken is tougher if I do that ) Next transfer chicken to your Kitchen Aid bowl with regular paddle. Make sure it is locked in place and turn it on slow. This will Shred your chicken in a few seconds.

3. Add cream cheese and Ranch seasoning to shredded chicken and about 1/2 cup of the cooking liquid. Turn Mixer on slow till its all combined.

That's it. That's the whole recipe. So So Simple and Easy Peasy!

Serve over a salad with dressing of choice, or make keto bread and eat as a sammie with a slice of cheese!!!!
(or if non keto as my kids are- they like it on a regular hamburger bun with a slice of cheddar cheese)

If you don't have a Large Mixer like a Kitchen aid you can shred chicken by hand and mix in the ingredients by hand of course. Not quite as fast, but still simple!

The Nitty Gritty That is Fibro

Today I may or may not have the flu. How would you not know, right? Well, if you have Fibromyalgia, every day feels like a variation of the Flu. So if I ever do get sick, like an acute Sickness, well I never know if it is yet another symptom, or a just a bad Fibro day. So it got me thinking...With the flu so rampantly going around, maybe now is a good time to try and explain my everyday, my Fibro. I know so many who love me, or who know me and have me on your prayer chain, well you aren’t really sure what exactly it is.
Buffalo Chicken Soup (topped with blue cheese here) Ya'll. I just can't even describe how amazing this tastes- it is just so very decadent and exactly what I was craving today with my cold. The fact that it comes together with little to no effort was just the icing on on the proverbial cake for me today! As much as I love buffalo dip, I may just love this more! Ingredients : 25 ounces canned white meat chicken ( or shred your own) 10 oz riced cauliflower ( I used frozen Birdseye) 1/2 cup Frank's Hot Sauce 1/2 cup sour cream 1/2 cup heavy cream 2 cups chicken stock 1 cup shredded cheddar cheese 1 Tbsp Ranch ( I used Penzey's) 1 can Chipotle Rotel ( or any Rotel) Directions: Dump all ingredients except sour cream into Instant Pot. Set to Soup Setting ( or Manual 20 min) and make sure top is on Sealing. Now just let it cook and depressurize. Stir in sour cream and taste for any flavor adjustments.  Serve with extra cheese, or blue cheese on top. E...
