Jalapeno Popper Stuffed Chicken Breast
INGREDIENTS-
5 chicken breasts
1/4 cup shredded cheddar
2 jalapenos diced finely
4 pieces bacon cooked and finely diced, reserve bacon grease
3/4 pound ground pork sausage, cooked
1.Make jalapeno mixture and set aside -
Take cream cheese through pork sausage and mix all together until incorporated
2. Slice each chicken breast part way through, forming a pocket. Salt and pepper each piece.
3. Place 2 mounded spoons of filling in each chicken breast and then using toothpicks close each piece.
4. Sear each side of chicken breast in the reserved bacon grease over a high heat and then set aside.
5. Place all the of seared breasts on baking sheet and bake for 350 degree oven for 30 min. (approximately- depends of thickness of breasts)
Let sit for five minutes or so and then serve with side of your choice.
