Meatball Casserole

MEATBALL CASSEROLE


This casserole is a quick and easy weeknight KETO friendly meal that can be adapted with sides to serve anyone in your family. I tend to eat this with a side of broccoli and cauliflower. My kids prefer over pasta with veggies on the side. Once in a blue moon I will make them in individual fathead boats- almost sub sammie style! If you want to make this even faster you could easily make up a ton of meatballs and freeze for even faster assembly!

Ingredients-
  • 2 lbs ground beef ( i prefer to use 80-20, though the recipe stats have 85-15)
  • 1/4 cup pesto ( any kind, I just go for jarred from ALDI generally)
  • 1/4 cup Parmesan ( the kind in the green jar, but anything works)
  • 1 tsp garlic powder
  • 1 Tbsp Italian seasoning dry blend of choice
  • salt and pepper to taste
  • crushed red peppers (about a tsp but totally optional)
  • 1 reg jar Marinara sauce, approx 2 cups( I used Trader Joe three cheese pomadoro)
  • 1 cup Mozzarella Cheese, shredded
  1. Preheat oven to 350 degrees, and lightly dust 9x13 casserole dish with cooking spray ( I use coconut oil spray)
  2. Place ingredients through crushed red peppers into a big bowl and knead together, don't mess with it too much or it will get tough
  3. Form Meatballs and set all on a plate until ready to cook
  4. Heat 2 tbsp or so of cooking oil ( I used 1 T Avacado oil and 1 T Bacon grease) over a medium high heat
  5. Brown meatballs on each side ( no need to cook through here, just brown)
  6. Place 1/4 cup Marinara in bottom of casserole dish and layer meatballs on top. Next top with remaining marinara and then mozzarella cheese.
Bake for 25 min. in a 350 degree oven. 
Serve with veggies and a side salad

Of course you could get fancy and make cauliflower cheesy bread, or fathead sub sammies! But for a super quick weeknight meal I can make this start to finish served with microwaved steam fresh veggies in less than 40 minutes start to table! ( even shorter if you'd premade your meatballs!)

Quick and Easy Low Carb Sausage Balls

Sausage Balls - My Family Recipe Ketofied! 1 pound ground sausage ( we prefer the a spicy one) 8 oz shredded cheddar 1/4 cup Kraft Parmesan cheese (green can) 1 cup Trim Healthy Mama Blend flour ( could sub almond flour, but see my substitution note below) 1 tsp Baking Powder salt/pepper to taste, about a tsp each DIRECTIONS: Preheat oven to 350 degrees Dump all ingredients in a bowl and use your hands to mash it all together well. It will not fully incorporate, there is always some stray cheese and flour, thats ok, but work it until almost fully incorporated) Next form balls and place on a baking sheet lined with parchment. Bake for 20 min or so..till golden brown! Enjoy! *****If you use almond flour I suggest adding 4 oz cream cheese as well, as it could be a bit drier. *****Sometimes I add the cream cheese anyways- I love cream cheese!!!!!
