Crack Chicken - Keto Approved!

I don't know if you've ever heard of Crack Chicken, but I made my version for dinner tonight and was reminded just how addictive this stuff is and how much my family LOVES it. I've made it to take a meal to people in the past as well and I have never had a bad review. It is also VERY Keto friendly and can be made quickly and used for meal prep for a week so so easily! I made it to serve Family Style. So, here goes.... My  Instant Pot Crack Chicken - Ingredients: 2 lbs chicken ( I used chicken breast but you could do thighs or even skip the instant pot and make your shredded chicken from a rotisserie or however you please) 1 Tbsp Ranch seasoning ( I use Penzey's buttermilk ranch  ) - it does have a tad sugar in it but its so little and spread out over many serving... 1 cup water seasoning salt 8 oz cream cheese 1. Sheet Pan Fajitas - Keto Approved!

Sheet Pan Chicken Fajitas This recipe is so simple and so versatile, as its easy to do for meal prep or size up and do to serve a ton of peeps! I did film a video making this family style for a party, but I will post below just as a basic recipe! I hope ya'll can make this and enjoy it as much as we do! Ingredients 2 lbs chicken, cut into thin strips 1 red pepper, sliced 1 yellow pepper, sliced 1 onion, sliced 1 lemon 2 Tbsp fajita seasoning, divided ( I like Penzey's   ) 2 Tbsp Avocado oil, divided ( or oil of your choice) Toppings of choice- shredded lettuce shredded cheeses salsa guacamole sour cream pepitas /sunflower seeds sliced limes ( and on and on, whatever floats your boat!) Thai Meatballs with a Spicy Thai Peanut Sauce- Keto friendly!

Sometimes things just come together. Some days you just KILL it in the Kitchen. I don't feel like that happens all that often for me, but today I was just feeling myself ya'll. LOL! So I furiously copied down the ingredients and amounts used so that I could recreate this meal again and again. If anyone tries it let me know what you think! Thai Meatballs over Zoodles with Thai Peanut Sauce Ingredients for Meatballs 2 lbs ground beef (80/20) 2.5 Tbsp Thai curry spice seasoning Mix together thoroughly and then form into smallish meatballs. Brown on all sides in 1 Tbsp of cooking oil ( I used avocado oil) and then place on simmer with a lid for a few minutes to cook through. Make sauce while it simmers. Ingredients for Sauce 3/4 cup Peanut butter ( no sugar added) 1/2 cup Soy sauce 1 Tbsp Chili garlic sauce (this amount is good for mild spice, add more or less) 1 tsp ground ginger 1/4 cup Coconut milk (only do the creamy part, drain the liquid off) 

Instant Pot Sausage and Peppers

Ok, so peppers, onions, and tomatoes are not the lowest carb count. I Know! I KNOW!  I think I actually stay under 10 carbs- but it is so hard to count it out exactly in this meal. I make this for my family who are not keto, so its easy to just take the parts that fit for me and serve the rest to my family with pasta. My advise is to make sure you buy sausage and marinara with the lowest carb count possible. This way you can eat as much sausage as you desire, and just a bit of the rest for flavoring. When you cook this in the Instant Pot you infuse the sausage with all the flavors- so you can enjoy this meal and not really even do much sauce. Meatball Casserole

MEATBALL CASSEROLE This casserole is a quick and easy weeknight KETO friendly meal that can be adapted with sides to serve anyone in your family. I tend to eat this with a side of broccoli and cauliflower. My kids prefer over pasta with veggies on the side. Once in a blue moon I will make them in individual fathead boats- almost sub sammie style! If you want to make this even faster you could easily make up a ton of meatballs and freeze for even faster assembly! Ingredients- 2 lbs ground beef ( i prefer to use 80-20, though the recipe stats have 85-15) 1/4 cup pesto ( any kind, I just go for jarred from ALDI generally) 1/4 cup Parmesan ( the kind in the green jar, but anything works) 1 tsp garlic powder 1 Tbsp Italian seasoning dry blend of choice salt and pepper to taste crushed red peppers (about a tsp but totally optional) 1 reg jar Marinara sauce, approx 2 cups( I used Trader Joe three cheese pomadoro) 1 cup Mozzarella Cheese, shredded Preheat ove

Jalapeno Popper Stuffed Chicken

Jalapeno Popper Stuffed Chicken Breast INGREDIENTS - 5 chicken breasts 6 oz cream cheese 1/4 cup shredded cheddar 2 jalapenos diced finely 4 pieces bacon cooked and finely diced, reserve bacon grease 3/4 pound ground pork sausage, cooked  1.Make jalapeno mixture and set aside - Take cream cheese through pork sausage and mix all together until incorporated 2. Slice each chicken breast part way through, forming a pocket. Salt and pepper each piece. 3. Place 2 mounded spoons of filling in each chicken breast and then using toothpicks close each piece. 4. Sear each side of chicken breast in the reserved bacon grease over a high heat and then set aside. 5. Place all the of seared breasts on baking sheet and bake for 350 degree oven for 30 min. (approximately- depends of thickness of breasts) Let sit for five minutes or so and then serve with side of your choice.
