Keto Cheeseburger Casserole (with cabbage)

This is a family favorite recipe of mine, and boy am I glad because it is also one of my quick and easy recipes!!!! I just love it when I can feed my family in a jiffy! What you will need: 2 lbs ground hamburger meat 3 eggs 1 package of prepared cabbage  1 cup mayonaise 1 cup sour cream 1 cup shredded cheese ( you choose what type!) seasoning of your choice, amount of your choice ( i tend to do about a tbsp montreal steak seasoning generally, but at times I vary to make a mexican version, or an italian version, or...well you get it!) DIRECTIONS- Cook ground beef in a large pan over a medium heat until no longer pink.  Add cabbage and seasoning. Stir well and then turn to a low heat and cover.  Cook until cabbage has wilted down, around 10 minutes. Next stir remaining ingredients through sour cream.  Place beef mixuture in a pan. Top with mayonaise mixture. Top with Cheese. Bake in 350 degree oven for 30 minutes. Serve and Enjoy! NUTRITION- Total Calories 6

Keto Buffalo Chicken Ranch Casserole

This recipe is easy peasy a'll- and boy is it sinfully delicious! This recipe is 100% low carb, keto friendly! 2 lbs shredded Chicken ( I make ahead in my instant pot, could use rotisserie chicken easily as well) 1/4 cup bacon, cooked and diced - or bacon bits! 1/2 cup sour cream 1/2 cup hot sauce of choice ( Texas Pete or Franks would work well) 1 block (8 oz) cream cheese- full fat 2 Tbsp Buttermilk Ranch Dressing mix ( I use this one   ) 1 cup Cheese( I used a mix of Cheddar and Monterrey Jack) 1 package Steamable Cauliflower Rice ( I use Birdseye or Trader Joes), cooked according to package. Directions: Stir sour cream through ranch well in a bowl.  Add in Chicken and combine. Spread Riced Cauliflower in bottom of 9x13 baking dish. Spread Chicken Mixture over the top of the riced Cauliflower. Cover with Cheese. Sprinkle on Bacon. BAKE in 350 degree oven for 30 minutes!  THAT IS IT Ya'LL! EASY PEASY! Variations- leave out the cauliflower rice

Pizza Casserole

PIZZA CASSEROLE- This is more of a method than a recipe; by this I mean you can use whatever you feel like as toppings, and whatever cheese you have on hand, or feel like using. It would be easy even to change seasonings and replace the marinara with salsa, reinventing this as a Mexican style dish---and on and on.... For the purposes of being able to give nutrition facts I made it exactly as described below. Ingredients- 8 oz shredded cheese, divided 1.5 oz parmesan (I use the kind in the green can for this!) 2 Birdseye brand cauliflower rice ( or you could of course make your own if you really wanna) 1 egg 1/2 cup Heavy Whipping Cream 2 tsp italian seasoning 1 tsp garlic seasoning salt and pepper to taste  1 lb Italian ground sausage, cooked (save grease to add to cauliflower mixture for the added fat- optional, but why not?) 9.5 oz pepperoni ( I use uncured) 1 cup pizza sauce ( I used Walmart brand today) Preheat your oven to 375 degrees Fahrenheit and Grease y

Time to Shrink's Low Carb Green Chicken Enchiladas

Low Carb Chicken Enchiladas (1 recipe using low carb tortillas / 1 recipe using zucchini noodles as tortillas) --See video for much more detailed directions-- INGREDIENTS: 2 lbs shredded chicken ( I tend to shred in big batches in my Instant pot- See my crack chicken recipe for directions) 1 can Rotel 1 block Philadelphia Cream cheese 1 Tbsp spices of choice (optional- I tend to do taco seasoning type combination, but will be super tasty even if you totally omit this step) 2 Tbsp crushed chipotle peppers ( purely optional- if you enjoy heat) 1 bag Mexican shredded cheese, or equivalent amount cheese of choice (divided) 1 can Green Enchilada Sauce ( I use Aldi brand) 8 low carb tortillas of choice 1. 1-2 zucchini, sliced length wise thinly on a mandolin1.Combine chicken through half bag shredded cheese together in bowl and mix till well incorporated. 2. Philly Cheese Steak Meatloaf

Meatloaf is something I make often because no matter who in the family is ready to eat at what time, meatloaf holds so very well and is just as good straight out of the oven as it is hours later, or even later in the week! Meatloaf is perfect for Meal Planning as it just holds up and reheats beautifully! So whether you make this for a family, or just for you to eat on over the week- this recipe is just scrumptious! Ingredients-  for meatloaf- 1 lb ground beef 1 lb ground pork ( or sausage) 1/4 onion - diced 1 egg 1/4 cup Parmesan Cheese 1 Tbsp Penzey's Northwood Seasoning 2 tsp garlic bread seasoning (the gourmet collection brand) 2 tsp Italian seasoning for interior of meatloaf- provolone cheese slices, entire package 1/2 red pepper, sliced 1/4 onion, sliced (bit of oil for sauteeing) for glaze-- 1 T Worcestershire sauce 1/4 cup Heinz Reduced Sugar Ketchup 1 tsp hot sauce of choice Set oven to 350 degrees Fahrenheit. 1.
