Pizza Casserole

PIZZA CASSEROLE-
This is more of a method than a recipe; by this I mean you can use whatever you feel like as toppings, and whatever cheese you have on hand, or feel like using. It would be easy even to change seasonings and replace the marinara with salsa, reinventing this as a Mexican style dish---and on and on.... For the purposes of being able to give nutrition facts I made it exactly as described below.



Ingredients-

  • 8 oz shredded cheese, divided
  • 1.5 oz parmesan (I use the kind in the green can for this!)
  • 2 Birdseye brand cauliflower rice ( or you could of course make your own if you really wanna)
  • 1 egg
  • 1/2 cup Heavy Whipping Cream
  • 2 tsp italian seasoning
  • 1 tsp garlic seasoning
  • salt and pepper to taste 
  • 1 lb Italian ground sausage, cooked (save grease to add to cauliflower mixture for the added fat- optional, but why not?)
  • 9.5 oz pepperoni ( I use uncured)
  • 1 cup pizza sauce ( I used Walmart brand today)


Preheat your oven to 375 degrees Fahrenheit and Grease your 9x13 pan.
 Directions:
1. Steam cauliflower rice according to directions in microwave.
2. Place parmesan and 2 oz shredded cheese, cauliflower, egg, whipping cream and seasonings in blender and blend as much as you'd like - I tend to just do till its semi blended, but not yet creamy.
and then layer cauliflower mixture in the bottom of your pan.
3. Layer on marinara sauce.
4. Add any toppings you wish, meats, cheese, and any veggies at this time.
5. Bake for 20-25 minutes, till cheese all melty and bubbly!

Quick and Easy Low Carb Sausage Balls

Sausage Balls - My Family Recipe Ketofied! 1 pound ground sausage ( we prefer the a spicy one) 8 oz shredded cheddar 1/4 cup Kraft Parmesan cheese (green can) 1 cup Trim Healthy Mama Blend flour ( could sub almond flour, but see my substitution note below) 1 tsp Baking Powder salt/pepper to taste, about a tsp each DIRECTIONS: Preheat oven to 350 degrees Dump all ingredients in a bowl and use your hands to mash it all together well. It will not fully incorporate, there is always some stray cheese and flour, thats ok, but work it until almost fully incorporated) Next form balls and place on a baking sheet lined with parchment. Bake for 20 min or so..till golden brown! Meatball Casserole

MEATBALL CASSEROLE This casserole is a quick and easy weeknight KETO friendly meal that can be adapted with sides to serve anyone in your family. I tend to eat this with a side of broccoli and cauliflower. My kids prefer over pasta with veggies on the side. Once in a blue moon I will make them in individual fathead boats- almost sub sammie style! If you want to make this even faster you could easily make up a ton of meatballs and freeze for even faster assembly!
